For the Toppings:

• 1 cup ricotta cheese (use a dairy-free alternative if needed)

• Powdered sugar for dusting
• Fresh mint leaves (optional, for garnish)

Additional Items:

• Butter or a non-dairy spread for frying

How to Make Sourdough French Toast with Ricotta & Cherries

Crafting Sourdough French Toast with Ricotta & Cherries is a rewarding process that transforms simple ingredients into a breakfast delight. Follow these step-by-step instructions for a flawless result.

Step 1: Prepare the Custard Mixture

1. In a large mixing bowl, whisk together:
   • 4 large eggs
   • 1 cup whole milk (or almond milk for a dairy-free option)
   • 1 teaspoon vanilla extract
   • 1 teaspoon ground cinnamon
   • 1 tablespoon granulated sugar
2. Whisk until the mixture is smooth and slightly frothy. The cinnamon and vanilla will infuse the custard with warm, aromatic flavors.

Step 2: Soak the Bread

1. Lay the sourdough slices flat in a shallow dish or tray.
2. Pour the prepared custard mixture over the bread, ensuring each slice is fully coated.
3. Allow the bread to soak for 2-3 minutes per side. Sourdough’s dense texture requires ample soaking time to absorb the custard without becoming soggy.

Step 3: Cook the French Toast

1. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter or a non-dairy alternative.
2. Once the butter is melted and bubbling, gently place the soaked sourdough slices onto the skillet.
3. Cook for 3-4 minutes on each side or until golden brown and slightly crisp.

Step 4: Prepare the Toppings

1. If using fresh cherries, pit them and slice them in half. For frozen cherries, thaw them in a small saucepan over low heat. Add 1 tablespoon of honey or maple syrup for a glossy finish.
2. In a bowl, whip the ricotta cheese with a fork to make it smooth and creamy.

Step 5: Assemble the Dish

1. Place the cooked sourdough French toast on a serving plate.
2. Spread a generous dollop of ricotta over each slice.
3. Top with the prepared cherries and drizzle with maple syrup or additional honey.
4. Sprinkle with powdered sugar and garnish with fresh mint leaves if desired.

Serving and Storage Tips

Serving Suggestions

Serve this dish warm with a side of freshly brewed coffee or tea. For added indulgence, pair it with a fruit salad or a handful of toasted nuts for extra crunch. The contrast of the warm French toast and the creamy ricotta creates a perfect balance.

Storage Tips

• Refrigeration: Store any leftover French toast in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat to maintain its crisp texture.

Mistakes to Avoid

Creating the perfect Sourdough French Toast with Ricotta & Cherries might seem simple, but a few common missteps can affect the outcome. Avoid these pitfalls to ensure your dish turns out just as delicious as intended.

1. Using Fresh Bread

One of the most frequent mistakes is using fresh sourdough bread. Fresh bread can become overly soggy when soaked in the custard mixture, resulting in French toast that’s too soft or falls apart during cooking. Instead, opt for slightly stale sourdough, as it absorbs the custard without losing its structure.

2. Not Soaking the Bread Enough

While fresh bread soaks too much, not soaking stale sourdough long enough is another common issue. Sourdough is denser than other bread types, requiring ample time to absorb the custard. Ensure each slice is soaked for at least 2-3 minutes per side.

3. Overcrowding the Pan

Cooking too many slices at once can lower the pan’s temperature, resulting in unevenly cooked or soggy French toast. Cook in batches if needed, and maintain medium heat for even browning.

4. Skipping the Custard Whisking Step

Properly whisking the custard mixture is essential. If the sugar or cinnamon isn’t fully incorporated, it can lead to uneven flavor. Whisk until smooth and well-blended before soaking the bread.

5. Using High Heat

While it’s tempting to crank up the heat for faster cooking, high heat can cause the exterior to burn while the inside remains undercooked. Medium heat ensures a golden-brown crust and thoroughly cooked center.

6. Neglecting to Prep Toppings Ahead of Time

Cherries and ricotta need a little prep work. Forgetting to pit the cherries or whip the ricotta beforehand can slow down assembly. Always prepare toppings while the French toast is cooking.

Tips and Tricks

1. Choose the Right Bread

Sourdough is the star of this dish for its chewy texture and slight tang. If you’re looking for alternatives, consider brioche or challah for a sweeter, softer option.

2. Enhance the Custard

Add a pinch of nutmeg or a splash of orange juice to the custard mixture for an extra layer of flavor. These small additions can elevate the dish without overpowering the core ingredients.

3. Experiment with Cherries

Fresh cherries are ideal, but frozen cherries are a great substitute when they’re out of season. For added depth, lightly roast the cherries before using them as a topping.

4. Ricotta Variations

Enhance the ricotta by mixing in a teaspoon of lemon zest or a splash of almond extract. These subtle changes can add a refreshing twist to the dish.

5. Serve Family-Style

If you’re making this for a crowd, assemble the French toast on a large platter and let everyone customize their toppings. This approach is interactive and perfect for gatherings.

6. Make It Ahead

French toast can be made ahead of time and kept warm in a 200°F (90°C) oven. This tip is especially useful if you’re preparing other dishes for a brunch spread.

Suggestions

Sourdough French Toast with Ricotta & Cherries is already a standout dish, but there are plenty of ways to make it your own. Here are some suggestions to adapt and customize this recipe for different tastes and occasions.

1. Add Seasonal Fruits

While cherries are the highlight, this dish is incredibly versatile with other fruits. Try:

• Berries: Blueberries, raspberries, or strawberries for a sweet-tart contrast.
• Stone Fruits: Sliced peaches, nectarines, or plums can bring a juicy, summery twist.
• Apples or Pears: Sauté thin slices with a sprinkle of cinnamon and sugar for a warm, spiced topping.

2. Sweeten the Ricotta

If you prefer sweeter French toast, mix the ricotta with a tablespoon of powdered sugar or honey before spreading it over the toast. A touch of vanilla extract can also enhance the flavor.

3. Nutty Additions

Sprinkle toasted nuts such as almonds, pecans, or walnuts over the assembled dish for added crunch and richness. Candied nuts are also a delightful option.

4. Savory Twist

For a savory version, skip the cherries and ricotta, and instead top the French toast with avocado slices, poached eggs, or sautéed mushrooms. The sourdough base pairs wonderfully with savory toppings.

5. Spice It Up

Infuse the custard with warming spices like cardamom, allspice, or even a pinch of ground ginger to add complexity to the flavor profile.

6. Pair with Beverages

Complete your meal with complementary beverages like a cappuccino, freshly squeezed orange juice, or an iced chai latte.
