  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar
  • 1 cup ricotta cheese
  • 1 cup cherries, pitted and halved
  • 1 tablespoon honey (or maple syrup)
  • Powdered sugar for dusting
  • Butter or non-dairy spread for frying

Instructions

  1. Prepare the Custard: In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar until smooth.
  2. Soak the Bread: Dip the sourdough slices into the custard mixture, ensuring both sides are fully coated. Let them soak for 2-3 minutes per side.
  3. Cook the French Toast: Heat a skillet over medium heat and melt butter. Cook each slice of soaked bread for 3-4 minutes on each side until golden brown.
  4. Prepare the Toppings: While the toast is cooking, pit and slice the cherries. Warm them in a small pan with honey for 2-3 minutes, until soft and glossy.
  5. Assemble: Place the French toast on plates, spread a dollop of ricotta on top, and spoon the cherry mixture over it. Dust with powdered sugar and serve immediately.
