Now, let me take you back to a time when I was just a fledgling baker, armed with nothing but enthusiasm and an impressive collection of mismatched measuring cups. It was October, and I had decided to host my first-ever pumpkin-themed dinner party. As friends gathered around, I served these delightful cookies fresh from the oven, only to watch them disappear faster than a magician’s rabbit. The laughter, joy, and sugar-induced euphoria that filled that room left me with a heartwarming memory that still brings a smile to my face.

Ingredients for Soft Pumpkin Cookies with Cream Cheese Icing

Here's what you'll need to make this delicious dish:

• Canned Pumpkin Puree: Make sure it’s pure pumpkin without any added spices; it’s essential for that moist texture.

• All-Purpose Flour: Use standard all-purpose flour for the best structure; no fancy flours needed here.

• Sugar: Granulated sugar adds sweetness; brown sugar can enhance flavor with its rich molasses notes.

• Baking Soda: This will help your cookies rise beautifully without making them too fluffy.

• Spices (Cinnamon and Nutmeg): These spices give your cookies that quintessential fall flavor—just like Grandma used to make.

• Eggs: They provide moisture and act as a binding agent in your cookie dough.

• Vanilla Extract: A dash of vanilla elevates the flavors; go for pure extract if possible!

• Softened Cream Cheese: Key ingredient for the icing; ensure it’s at room temperature for smooth mixing.

• Powdered Sugar: This is what sweetens your cream cheese icing; it blends beautifully without graininess.
