Ingredients for Pumpkin Streusel Cheesecake
Here's what you'll need to make this delicious dish:
- Graham Cracker Crumbs: These are your crust base, adding crunch and flavor. Try using honey graham crackers for extra sweetness.
- Pumpkin Puree: Go for canned pumpkin puree—not pumpkin pie filling—to control the sweetness.
- Cream Cheese: Use full-fat cream cheese for the smoothest texture; low-fat versions just won't cut it in cheesecakes.
- Granulated Sugar: This balances out the flavors; adjust according to your taste preference.
- Sour Cream: It adds tanginess and creaminess; plain Greek yogurt can be used as a substitute if needed.
- Eggs: They bind everything together. Make sure they're at room temperature for best results.
For the Streusel Topping:
- All-Purpose Flour: This forms the base of your streusel topping; sift it for a lighter texture.
- Brown Sugar: Dark brown sugar gives a deeper flavor—like autumn in every bite!
- Butter: Use unsalted butter to control salt levels in your dessert; melt it slightly for easier mixing.
- Cinnamon: A staple spice that enhances both sweetness and warmth in this delightful dish.

How to Make Pumpkin Streusel Cheesecake
Follow these simple steps to prepare this delicious dish:
Step 1: Preheat Your Oven
Preheat your oven to 325°F (160°C). This ensures an even bake so you won’t end up with a sad, undercooked center.
Step 2: Prepare Your Crust
In a mixing bowl, combine graham cracker crumbs with melted butter and granulated sugar. Press this mixture firmly into the bottom of a springform pan—think of it like giving your crust a good massage!
Step 3: Mix Your Filling
In another bowl, beat together cream cheese until smooth. Gradually add granulated sugar while mixing. Then incorporate pumpkin puree, sour cream, eggs, and spices until everything is well blended.
Step 4: Bake
Pour the filling over your prepared crust and smooth out the top with a spatula. Bake in the preheated oven for about one hour or until set around the edges but slightly jiggly in the center—like me after too many slices!
Step 5: Make The Streusel Topping
While that’s baking away, mix all streusel ingredients together until crumbly. After one hour of baking, sprinkle this topping over your cheesecake and return it to the oven for another fifteen minutes.
Step 6: Cool & Serve
Once baked, let the cheesecake cool at room temperature before refrigerating it for at least four hours—or overnight for optimal firmness! Serve chilled with whipped cream or enjoy on its own.
