How to Make Iced Pumpkin Oatmeal Cookies
Follow these simple steps to prepare this delicious dish:
Step 1: Preheat Your Oven
Preheat your oven to 350°F (175°C). Get your baking sheets ready by lining them with parchment paper or using silicone mats. This will help prevent any sticky situations when it comes time to remove those sweet treats.
Step 2: Mix Dry Ingredients
In a large bowl, whisk together flour, rolled oats, cinnamon, and a pinch of salt. This step ensures your dry ingredients blend evenly before they meet their wet counterparts—think of it as an introduction at a party where everyone must get along!
Step 3: Combine Wet Ingredients
In another bowl, mix together pumpkin puree, granulated sugar, eggs, and vanilla extract until well combined. You want this mixture to be smooth—imagine you're making a delicious smoothie but without the blender.
Step 4: Bring It All Together
Gradually add the dry mixture into the wet mixture, stirring gently until just combined. Don't overmix! We’re aiming for tender cookies here—not rubbery ones that could double as hockey pucks.
Step 5: Scoop and Bake
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto prepared baking sheets. Leave some space between each cookie because they will spread slightly while baking. Bake for about 12-15 minutes or until edges are golden but centers remain soft.
Step 6: Ice Those Cookies
While cooling on wire racks, prepare your icing by whisking powdered sugar with milk until smooth—aim for drizzle-able consistency. Once cooled completely, drizzle icing over cookies like you’re decorating a masterpiece!
Transfer to plates and enjoy these lovely iced pumpkin oatmeal cookies with friends or family—or keep them all to yourself (no judgment here!).
Now you know how to create these delightful treats that capture all that's wonderful about fall in every bite!
