How to Make

Making chili con carne in a slow cooker is as simple as it gets. With minimal prep and a few hours of slow cooking, you’ll have a dish that’s packed with flavor and ready to impress.

Full Recipe Measurements

1 lb (450 g) lean ground beef
1 medium onion, diced
3 garlic cloves, minced
1 bell pepper, diced (red or green)
1 can (14 oz) diced tomatoes
1 can (6 oz) tomato paste
1 can (15 oz) kidney beans, drained and rinsed
1 cup (240 ml) beef broth
2 tablespoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
½ teaspoon dried oregano
¼ teaspoon cayenne pepper (optional, for heat)
Salt and black pepper to taste

Step-by-Step Instructions

Brown the Ground Beef
- In a skillet over medium heat, cook the ground beef until browned. Break it up with a spatula and drain any excess grease. Transfer the beef to the slow cooker.

Sauté the Vegetables
- In the same skillet, sauté the onion and garlic until softened, about 2-3 minutes. Add the diced bell pepper and cook for another 2 minutes. Add this mixture to the slow cooker.
Add Remaining Ingredients
- Into the slow cooker, add the canned tomatoes, tomato paste, kidney beans, beef broth, and all the spices. Stir well to combine everything.
Set and Forget
- Cover the slow cooker with its lid. Cook on low for 6-8 hours or high for 3-4 hours, allowing all the flavors to meld together beautifully.

Check and Adjust Seasoning
- Before serving, taste the chili and adjust the seasoning with additional salt, pepper, or spices if needed.
Serve and Enjoy
- Ladle the chili into bowls and add your favorite toppings, like shredded cheese, sour cream, or fresh cilantro.

Serving and Storage Tips

Serving Suggestions

Chili con carne is versatile and pairs well with a variety of side dishes and accompaniments. Here are some ideas to elevate your meal:

Over rice: Serve the chili over a bed of white or brown rice for a heartier dish.

With cornbread: A slice of warm, buttery cornbread is the perfect companion to soak up all that flavorful chili sauce.
Tortilla chips: Use them as a crunchy topping or for scooping, nacho-style.
In a bread bowl: Hollow out a loaf of crusty bread and fill it with chili for an indulgent presentation.

Loaded baked potato: Spoon chili over a baked potato and top with cheese and sour cream.

Storage Tips

Refrigeration: Allow the chili to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 4 days.
Freezing: Chili freezes exceptionally well. Divide it into portioned containers or freezer bags, label with the date, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.

Reheating: Warm the chili on the stovetop over medium heat, stirring occasionally, or use the microwave for convenience. Add a splash of water or broth if it thickens too much during storage.

Mistakes to Avoid

Even with an easy recipe like slow cooker chili con carne, there are a few common pitfalls that can affect the dish's flavor, texture, or overall success. Let’s ensure you avoid them:

1. Not Browning the Beef First

Why it matters: Browning the ground beef before adding it to the slow cooker develops a rich, deep flavor that raw beef simply can’t achieve in the slow cooker.

Solution: Take the time to brown the beef in a skillet. This extra step is worth it!

2. Using Too Much Liquid

Why it matters: Slow cookers don’t evaporate liquid like stovetop cooking does. If you add too much broth or water, your chili might end up too watery.
Solution: Stick to the recipe measurements. If it still turns out thin, you can thicken it by letting it cook uncovered for the last 30 minutes or by adding a slurry of cornstarch and water.

3. Overcooking the Beans

Why it matters: Canned beans can become mushy if cooked for too long, affecting the chili's texture.
Solution: If you’re concerned about texture, add the beans during the last hour of cooking rather than at the beginning.

4. Skipping Seasoning Adjustments

Why it matters: Chili develops flavor over time, but it may need some fine-tuning at the end.

Solution: Always taste the chili before serving and adjust salt, spices, or heat levels to your liking.

5. Forgetting the Toppings

Why it matters: Toppings like cheese, sour cream, and cilantro bring additional layers of flavor and texture to your chili.
Solution: Prepare a variety of toppings ahead of time so guests can customize their bowls.

Tips and Tricks

1. Layer Your Spices

Add half of your spices at the beginning of cooking and the rest during the last hour. This keeps the flavors fresh and vibrant.

2. Customize the Heat Level

Adjust the cayenne or chili powder based on your preference. For a milder chili, use less; for a spicier version, add chopped jalapeños or a pinch of crushed red pepper.

3. Use High-Quality Ingredients

Opt for fresh vegetables, good-quality canned tomatoes, and a flavorful broth. These simple choices make a big difference in the final taste.

4. Let the Flavors Rest

If time allows, let the chili sit for a few hours after cooking or refrigerate it overnight. The flavors will meld together and become even better.

5. Add Fresh Garnishes

Brighten the dish with a squeeze of fresh lime juice, a handful of chopped green onions, or a sprinkle of cheese for added layers of flavor and color.

FAQ

1. Can I Use Fresh Beans Instead of Canned?

Answer: Absolutely! If using fresh beans, soak them overnight and cook them separately before adding them to the slow cooker. This ensures they are tender without overcooking.

2. How Can I Thicken My Chili?

Answer: If your chili is too thin, try:
- Mashing some of the beans with a fork and stirring them back into the chili.
- Adding a cornstarch slurry (1 tablespoon of cornstarch mixed with 1 tablespoon of water).
- Letting the chili simmer uncovered for 30 minutes to reduce the liquid.

3. Is It Possible to Make This Chili Vegan?

Answer: Yes! Swap the ground beef for plant-based crumbles or cooked lentils, and use vegetable broth instead of beef broth.

4. Can I Freeze Chili?

Answer: Definitely! Chili freezes well for up to three months. Cool it completely, portion it into airtight containers, and label with the date. Reheat on the stovetop or in the microwave.

5. How Do I Adjust the Spice Level?

Answer: To make it milder, use less cayenne or chili powder. For extra heat, add hot sauce, diced jalapeños, or a pinch of ghost pepper powder.

6. Can I Cook This on High Heat Instead of Low?

Answer: Yes, but the flavors won’t develop as deeply. If time is limited, you can cook on high for 3-4 hours instead of low for 6-8 hours.
