  • 1 lb (450 g) ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste

Instructions

  • Prepare the base:
    Heat olive oil in a skillet over medium heat. Sauté onion, garlic, and bell pepper until softened. Add ground beef and cook until browned.
  • Combine in slow cooker:
    Transfer the cooked mixture to your slow cooker. Add diced tomatoes, kidney beans, beef broth, tomato paste, and all the spices. Stir to combine.
  • Cook:
    Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
  • Serve:
    Adjust seasonings if needed. Serve warm with your favorite toppings like shredded cheese, sour cream, or fresh cilantro.
