What You’ll Need

For this recipe, you won’t need a long shopping list. Most of the ingredients are likely already in your pantry, making this a convenient meal to throw together in a pinch. Here’s what you’ll need to make your One-Pot Macaroni Cheeseburger:

Ingredients:

• 1 lb (450g) ground beef – You can also use ground turkey or a plant-based ground meat alternative for a leaner or vegetarian option.
• 2 cups elbow macaroni – This is the classic pasta choice for macaroni and cheese, but feel free to use any short pasta shape you prefer, like penne or shells.
• 1 medium onion, finely chopped – Adds a nice flavor base and crunch to the dish.
• 2 cloves garlic, minced – For that aromatic, savory punch.
• 1 cup beef broth – Gives the dish a rich flavor; if you prefer a vegetarian version, use vegetable broth.
• 1 cup milk – Full-fat milk works best for a creamy, rich texture, but you can substitute with any non-dairy milk like almond or oat milk for a dairy-free version.
• 2 cups shredded cheddar cheese – This is the star ingredient for cheesiness! Feel free to experiment with other cheeses like mozzarella, Monterey Jack, or a blend of your favorites.
• ¼ cup ketchup – This provides the familiar tangy cheeseburger flavor.
• 1 tablespoon Worcestershire sauce – Adds depth of flavor (for a non-alcoholic option, choose a vinegar-based Worcestershire sauce).
• Salt and pepper to taste – Essential for seasoning.
• Optional garnish: Fresh chopped parsley or sliced pickles – for a burst of color and extra flavor.

Having these ingredients on hand will ensure that you can make this dish in no time, with minimal fuss. Now that we have everything we need, let’s move on to the next part—how to make this delicious One-Pot Macaroni Cheeseburger!

How to Make

Now that you have everything you need, let’s get cooking! The beauty of this One-Pot Macaroni Cheeseburger recipe is its simplicity and how quickly it comes together. Follow these steps for a deliciously creamy, cheeseburger-inspired dish:

Step 1: Brown the Ground Beef
In a large pot or Dutch oven, heat a little oil over medium heat. Once the oil is hot, add the ground beef. Use a wooden spoon or spatula to break it apart as it cooks. Brown the beef for about 5-7 minutes, stirring occasionally, until it is fully cooked and no longer pink. If there is excess fat, you can drain it off at this point. For a leaner option, use ground turkey or a plant-based substitute.

Step 2: Sauté the Aromatics
Once the beef is browned, add the finely chopped onion and minced garlic to the pot. Stir everything together and cook for another 2-3 minutes, until the onions are softened and fragrant. This step adds a rich layer of flavor that complements the beef perfectly.

Step 3: Add the Pasta and Liquids
Now, it’s time to add the elbow macaroni. Stir the uncooked pasta into the beef and onion mixture. Pour in the beef broth and milk, then give everything a good stir. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 10-12 minutes, or until the pasta is tender and the liquid has absorbed. Stir occasionally to prevent the pasta from sticking to the bottom.

Step 4: Create the Cheeseburger Sauce
Once the pasta is cooked, it’s time to make the creamy cheeseburger sauce. Stir in the ketchup, Worcestershire sauce, and season with salt and pepper to taste. Then, add the shredded cheddar cheese and stir until the cheese is fully melted and the sauce is smooth and creamy.

Step 5: Serve and Enjoy
Give everything one final stir, ensuring that all the ingredients are well combined. The sauce should be creamy and coat the macaroni perfectly, just like a classic cheeseburger. If you like, you can sprinkle fresh chopped parsley or add sliced pickles on top for a pop of color and extra flavor.

• Pair with a side salad: A simple green salad with a tangy vinaigrette can balance out the richness of the macaroni and cheeseburger. Try adding some crunchy vegetables like cucumbers, cherry tomatoes, and bell peppers.
• Serve with crispy fries or potato wedges: If you’re craving a cheeseburger experience, why not go all out with a side of crispy fries or seasoned potato wedges? They’re the perfect complement to the macaroni.
• Add a little crunch: If you love texture, try adding some crispy bacon bits or toasted breadcrumbs on top for an added crunch.
• Top with extra cheese: If you’re a cheese lover, sprinkle some more shredded cheddar or your favorite cheese on top of the dish before serving. You can even broil it for a minute or two to get a golden, bubbly crust.

Storage Tips:

• Refrigeration: Store any leftovers in an airtight container in the refrigerator. The One-Pot Macaroni Cheeseburger will stay fresh for up to 3-4 days.

Mistakes to Avoid

Even though the One-Pot Macaroni Cheeseburger recipe is simple, there are a few common mistakes you’ll want to avoid to ensure your dish turns out perfectly every time. Here are some key things to keep in mind:

1. Overcooking the Pasta
One of the most common mistakes when making a one-pot dish like this is overcooking the pasta. While it’s tempting to just leave it simmering for a long time, pasta can quickly become mushy if cooked for too long. Be sure to check the pasta after about 10 minutes and give it a stir to see if it’s tender. If it’s done, remove the pot from the heat right away.

2. Using Too Much Liquid
When making a creamy dish like this, it’s important not to add too much liquid. The right amount of beef broth and milk ensures that the sauce will be thick and creamy. If you add too much liquid, the sauce may end up too thin and not stick to the pasta. If you accidentally add too much, you can let the mixture simmer uncovered for a few minutes to reduce the liquid and thicken the sauce.

3. Not Seasoning Enough
The flavors in this dish rely heavily on seasoning, particularly the beef, garlic, and onion. Don’t be shy with your salt and pepper! Taste the dish throughout the cooking process and adjust the seasoning to your preference. A little extra salt or pepper can make a big difference in bringing out the flavors.

4. Skipping the Broth
While milk is the base of the creamy sauce, the beef broth adds essential flavor depth. Skipping the broth may result in a bland dish. Make sure to use both for the best flavor. If you’re looking for a lower-sodium option, opt for a low-sodium beef broth or vegetable broth.

5. Not Stirring Frequently
Because this is a one-pot dish, it’s easy for pasta to stick to the bottom if you don’t stir it occasionally. Be sure to give the mixture a good stir every few minutes to prevent any sticking and ensure even cooking. This will help the pasta cook evenly and absorb the flavors.

1. Make It Even Cheesier
If you want an extra cheesy version of this dish, try adding a mix of cheeses! A combination of cheddar, mozzarella, and Monterey Jack will give the dish an amazing melt and a delightful, gooey texture. You can even sprinkle some Parmesan cheese on top for added flavor.

2. Use Leaner Meat or Plant-Based Alternatives
For a healthier version of this dish, feel free to swap the ground beef with leaner options like ground turkey or chicken. Alternatively, you can use plant-based ground meat if you're looking for a vegetarian or vegan-friendly option. These alternatives still provide a savory base for the dish without compromising on flavor.

3. Spice It Up
If you enjoy a little heat, you can easily spice up this dish by adding crushed red pepper flakes, a dash of hot sauce, or even some chopped jalapeños. These additions will give your One-Pot Macaroni Cheeseburger a zesty kick that will satisfy those who love spicy food.
