Southern Sweet Potato Casserole with Marshmallows

This classic Southern casserole combines creamy mashed sweet potatoes with a sweet, buttery topping of toasted marshmallows. Perfect for holiday dinners!


Ingredients

  • 4 medium sweet potatoes, peeled and cubed
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 1/2 cups mini marshmallows

Instructions

  • Cook the Sweet Potatoes: Boil cubed sweet potatoes in salted water until tender, about 15 minutes. Drain and mash.
  • Mix the Casserole: In a large bowl, combine mashed sweet potatoes, melted butter, brown sugar, cinnamon, nutmeg, vanilla, and milk. Stir until smooth.
  • Assemble and Bake: Transfer the sweet potato mixture to a greased casserole dish. Top with marshmallows.
  • Bake: Preheat the oven to 350°F (175°C) and bake for 25-30 minutes, or until marshmallows are golden brown.
  • Serve: Allow to cool slightly before serving.

Notes

  • For extra flavor, add a sprinkle of chopped pecans on top before baking.
  • Adjust sweetness by adding more or less brown sugar.
  • Can be made a day ahead and baked just before serving.
