  • 1 cup pastina (small pasta)
  • 4 cups chicken broth (or vegetable broth for a vegetarian option)
  • 1 tablespoon olive oil
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1/2 onion, diced
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Parmesan cheese (optional)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add the diced carrot, celery, and onion. Cook until softened, about 5-7 minutes.
  • Pour in the broth and bring to a boil.
  • Add the pastina and cook until the pasta is tender, about 5 minutes.
  • Season with salt and pepper to taste.
