  • 2 tbsp fresh lemon juice
  • For the crust: 2 cups all-purpose flour
  • 1/4 cup cold unsalted butter
  • 1/4 tsp salt
  • ice water as needed

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss sliced peaches with sugar, flour, lemon juice, and salt; let sit to release juices.
  3. For the crust, combine flour and salt in a bowl. Cut in butter until crumbly. Add ice water gradually until dough forms. Divide into two balls.
  4. Roll out the larger dough ball and fit it into your greased pie pan.
  5. Fill the crust with the peach mixture and cover with the second rolled-out dough. Cut slits on top for steam.
  6. Bake for about 45 minutes until golden brown and bubbly. Let cool before slicing.
