Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In another bowl, mix sugar and oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, food coloring, and vanilla.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Fill cupcake liners two-thirds full and bake for about 20 minutes or until a toothpick comes out clean.
- Let cool completely before frosting with cream cheese icing.
- Make the cream cheese frosting: beat the cream cheese and softened butter together until completely smooth, then add the sifted powdered sugar a cup at a time on low speed. Beat in the vanilla and continue for 1 minute more, until light and spreadable. Frost only once the bake has cooled completely.
