  • 1/4 cup low-sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 4 brioche buns
  • 2 tbsp honey

Instructions

  1. Season the chicken breasts with salt and pepper, then place them in a slow cooker or instant pot.
  2. In a bowl, whisk together pomegranate juice, brown sugar, soy sauce, garlic powder, apple cider vinegar, and honey until well combined.
  3. Pour half of the glaze over the chicken and cook: slow cooker on low for 6 hours or instant pot on high for 15 minutes.
  4. Once cooked, shred the chicken using two forks and mix it with the remaining glaze.
  5. Toast brioche buns until golden brown, then assemble the sandwiches by spooning pulled chicken onto each bun.
