  • 1/2 cup bonito flakes

  • 1 cup cubed silken tofu
  • 3 tablespoons miso paste (white or red)
  • 2 green onions, sliced

Instructions

  1. Prepare the dashi broth: In a pot, combine water, kombu, and bonito flakes. Simmer gently for about 10 minutes, then strain out solids.
  2. Add wakame seaweed to the dashi broth and let it soak for about five minutes until tender.
  3. Gently fold in the cubed tofu and warm through without boiling.
  4. Mix miso paste with a ladle of hot broth in a separate bowl until smooth; stir it back into the pot slowly.
  5. Turn off the heat and garnish with sliced green onions before serving.
