Instructions

  1. Trim excess fat from the brisket and rub with smoked paprika, cumin, salt, and pepper. Marinate for at least one hour or overnight.
  2. Preheat your smoker to 225°F (107°C). Smoke the brisket fat side up for about 12 hours until it reaches an internal temperature of 195°F (90°C).
  3. Wrap the cooked brisket in foil and let it rest for at least one hour.
  4. Slice against the grain into thin strips.
  5. Warm tortillas in a dry skillet for about 30 seconds on each side.
