  • 1 cup mascarpone cheese
  • 6 oz dark chocolate (high-quality)
  • 1 cup espresso coffee (freshly brewed and cooled)
  • 24 savoiardi (ladyfingers)
  • 1/2 cup granulated sugar
  • 2 tbsp cocoa powder

Instructions

  1. Brew espresso and allow it to cool.
  2. In a mixing bowl, combine ricotta, mascarpone, and sugar. Beat until smooth.
  3. Melt dark chocolate using a double boiler or microwave, then fold it into the ricotta mixture.
  4. Quickly dip each ladyfinger into the cooled espresso and layer them in a serving dish.
  5. Spread half of the chocolate-ricotta mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers followed by the remaining filling.
  6. Cover and refrigerate for at least four hours or overnight to meld flavors.
