  • 1.5 lbs flank steak (or top sirloin), thinly sliced
  • 2 large yellow onions, thinly sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tablespoons Dijon mustard
  • 2 teaspoons olive oil (for brushing)
  • Salt and pepper, to taste

Instructions

  1. Caramelize the Onions: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions, and cook slowly, stirring occasionally, until golden brown (about 20-25 minutes). Add garlic, thyme, Worcestershire sauce, and beef broth. Simmer for 2-3 minutes, then remove from heat.
  2. Prepare the Beef: Season beef slices with salt, pepper, and Dijon mustard. Spoon 1-2 tablespoons of the onion mixture onto each beef slice, top with shredded Gruyère cheese, then roll up and secure with toothpicks.
  3. Sear the Roll-Ups: In the same skillet, heat 2 teaspoons of olive oil. Brown the roll-ups on all sides (about 3-4 minutes), then transfer to a preheated 375°F (190°C) oven. Bake for 12-15 minutes or until beef is cooked through and cheese is melted.
  4. Serve: Let the roll-ups rest for a few minutes, remove toothpicks, and serve with your favorite side dishes.

Notes

  • Meat Options: Flank steak works best, but you can substitute with top sirloin or even chicken breasts for a lighter option.
  • Cheese Options: Gruyère is traditional, but Swiss, mozzarella, or provolone can also be used.
