    • 2 cups all-purpose flour
    • 1 ½ tsp baking powder
    • ½ tsp baking soda
    • 1 cup granulated sugar
    • ½ tsp salt
  • Wet Ingredients:
    • 1/4 cup fresh lemon juice
    • 2 tsp lemon zest
    • ½ cup unsweetened applesauce
    • ½ cup vegetable oil
    • 1 cup non-dairy milk (almond, soy, or oat)
    • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt.
  3. Combine Wet Ingredients: In a separate bowl, whisk together lemon juice, lemon zest, applesauce, oil, non-dairy milk, and vanilla extract.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir until just combined (don't overmix).
  5. Bake: Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • For extra lemon flavor, try adding a lemon syrup soak after baking. Combine ¼ cup lemon juice and ¼ cup sugar, heat until dissolved, and brush over the cake while it's still warm.
  • Gluten-free option: Use a 1:1 gluten-free flour blend for a gluten-free version of this cake.
