Ingredients
- 14 oz firm tofu, pressed and cubed
- 2 medium sweet onions, sliced
- 1 cup bell peppers, sliced (mixed colors)
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp vegetable oil (canola or peanut)
- 2 green onions, chopped (for garnish)
Instructions
- Press the tofu between paper towels to remove excess moisture. Cut into bite-sized cubes.
- In a large skillet over medium heat, add vegetable oil. Sauté sliced onions for 10-15 minutes until golden brown.
- Push onions aside, add minced garlic and cubed tofu to the skillet. Cook for another 5-7 minutes until tofu is slightly browned.
- Add sliced bell peppers and cook for an additional 5 minutes until soft.
- Pour in soy sauce and mix well. Cook for another couple of minutes to combine flavors.
- Garnish with chopped green onions before serving.
