  • 1 cup jasmine rice
  • 1 ripe mango (diced)
  • 1/2 cup red bell pepper (chopped)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 1 lime
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • Salt, to taste

Instructions

  1. Cook the jasmine rice according to package instructions; rinse until water runs clear and use two cups of water for every cup of rice.
  2. Heat olive oil in a skillet over medium-high heat; sauté shrimp seasoned with salt and pepper until pink (about 3 minutes).
  3. While the shrimp cooks, dice the mango and red bell pepper.
  4. In a small bowl, whisk together honey, soy sauce, and lime juice; adjust sweetness if needed.
  5. Assemble bowls with jasmine rice as the base, then layer shrimp, mango, red bell pepper, and cilantro on top.
  6. Drizzle the sauce over each bowl before serving.
