  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup olive oil (for frying)
  • Lemon wedges (for serving)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the chicken: Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/4-inch thickness using a meat mallet or rolling pin.
  2. Set up the breading station: In one shallow dish, place the flour, seasoned with salt and pepper. In another, beat the eggs. In the third, combine breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  3. Bread the chicken: Dredge each chicken breast in the flour, dip it into the beaten eggs, then coat it in the breadcrumb mixture, pressing gently to ensure it sticks.
  4. Fry the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the breaded chicken and cook for 3-4 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).
  5. Drain and serve: Transfer the chicken to a paper towel-lined plate to drain. Serve hot with a squeeze of lemon juice and garnish with parsley if desired.

  • For extra crispy chicken, consider double-breading by dipping the chicken in the egg and breadcrumb mixture twice.
