- 15 oz can crushed tomatoes
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, cook the chicken breasts in olive oil until golden brown (about 6 minutes per side). Remove from heat and shred the chicken.
- In the same skillet, sauté chopped onions and minced garlic until fragrant (about 3 minutes), then stir in the fresh spinach until wilted.
- In a bowl, mix together crushed tomatoes with chicken broth, salt, pepper, and any desired spices.
- Layer half of the torn corn tortillas in the baking dish; top with half of the shredded chicken and sautéed vegetables. Pour half of the sauce over this layer and sprinkle with cheese. Repeat layers.
- Cover with foil and bake for about 25 minutes; remove foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
