- 2 cups all-purpose flour
- 1 teaspoon granulated sugar
- ½ teaspoon salt
- 1 cup unsalted butter (cold, cubed)
- 6-8 tablespoons ice water
For the Blueberry Filling:
- 2 cups fresh blueberries (or frozen, thawed)
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon vanilla extract
- Pinch of salt
For the Egg Wash:
- 1 egg (beaten)
- 1 tablespoon milk
Instructions
- Make the Pastry: In a bowl, combine flour, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until the dough holds together. Chill for 30 minutes.
- Prepare the Filling: In a saucepan, mix blueberries, sugar, cornstarch, lemon juice, vanilla, and salt. Cook over medium heat for 5-7 minutes until thickened. Let cool slightly.
- Assemble the Strudels: Preheat the oven to 400°F (200°C). Roll out the chilled dough and cut into rectangles. Place a tablespoon of filling on one side of each rectangle. Fold over and seal the edges with a fork.
- Bake: Brush the tops with egg wash. Place on a baking sheet and bake for 20-25 minutes, or until golden brown.
- Cool and Serve: Allow to cool for a few minutes before serving.
Notes
- For added flavor, consider adding a pinch of cinnamon to the filling.
- These strudels freeze well; assemble and freeze unbaked, then bake directly from the freezer.
