Ingredients
- 4 medium zucchinis
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
- Grated Parmesan cheese for serving (optional)
Instructions

Spiralize the Zucchini:
Using a spiralizer or a vegetable peeler, create noodle-like strands from the zucchinis. Set aside. -
Sauté the Garlic:
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. -
Cook the Zucchini Noodles:
Add the zucchini noodles to the skillet, tossing them gently with the garlic. Cook for 2-3 minutes until they are just tender but still have a slight crunch. -
Add Tomatoes and Season:
Stir in the cherry tomatoes and red pepper flakes (if using). Season with salt and pepper to taste. Cook for another 1-2 minutes until the tomatoes are slightly softened. -
Serve:
Remove from heat and stir in fresh basil. Serve immediately, topped with grated Parmesan cheese if desired.
