Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • ¾ cup sugar
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups shredded zucchini (about 1 medium zucchini)
  • ½ cup chopped walnuts (optional)

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, beat the eggs, sugar, oil, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients and mix until combined. Fold in the shredded zucchini and walnuts (if using).
  • Divide the batter evenly among the muffin cups.
  • Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • You can substitute half of the all-purpose flour with whole wheat flour for a healthier version.
