Description

These crispy, golden Zucchini Garlic Bites are a healthy and delicious snack or side dish, packed with the fresh flavor of zucchini and the bold taste of garlic. Perfectly baked, not fried, these bites are a guilt-free way to enjoy a veggie-packed treat. Ideal for meal prep, parties, or a quick weeknight snack!

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 1/4 cup grated Parmesan cheese (optional for dairy-free)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • Olive oil spray or drizzle for baking

Instructions

  • Prepare Zucchini: Grate the zucchinis and place them in a clean kitchen towel to squeeze out excess moisture.
  • Mix Ingredients: In a bowl, combine the grated zucchini, breadcrumbs, Parmesan, minced garlic, parsley, egg, salt, and pepper. Stir until fully combined.
  • Form Bites: Shape the mixture into small patties or bite-sized balls.
  • Bake: Preheat oven to 400°F (200°C). Place the zucchini bites on a lined baking sheet and lightly spray with olive oil. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
  • Serve: Let the bites cool slightly before serving. Pair with your favorite dipping sauce, like ranch or marinara.

Notes

  • Draining Zucchini: Be sure to squeeze out as much moisture as possible from the grated zucchini. This is key for achieving crispy bites.
  • Add Spices: Feel free to experiment with herbs like basil or oregano for extra flavor. A pinch of red pepper flakes can add a bit of heat if you like spice.
  • Egg Substitution: For a vegan version, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) or chickpea flour as a binder.
