- Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
- Mix Wet Ingredients: In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Add Zucchini and Chocolate Chips: Fold in the grated zucchini and chocolate chips until evenly distributed.
- Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
