  • 1 cup all-purpose flour

  • ½ cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  • Prepare the Zucchini: Grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  • Mix Wet Ingredients: In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  • Add Zucchini and Chocolate Chips: Fold in the grated zucchini and chocolate chips until evenly distributed.
  • Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
