  • 1 celery stalk, sliced
  • 1 cup diced tomatoes (canned or fresh)
  • 4 cups fish or vegetable broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 cup cooked rice (optional, for serving)
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  • Prep the Vegetables: Heat olive oil in a large pot over medium heat. Sauté onion, garlic, bell pepper, and celery until softened, about 5 minutes.
  • Add Seasonings and Base: Stir in Cajun seasoning, smoked paprika, salt, and black pepper. Add the diced tomatoes and broth. Bring to a gentle simmer.
  • Cook the Fish: Add fish chunks to the simmering soup. Cook for 5–7 minutes, or until the fish is opaque and flaky.
  • Serve: Ladle the soup into bowls, optionally over cooked rice. Garnish with parsley or green onions and enjoy!
