Prep Pumpkin & Whisk Dry Ingredients

  3. In a medium bowl, whisk together all-purpose flour, cream of tartar, baking soda, pumpkin pie spice, and sea salt until combined.
Cream Wet Ingredients & Form Dough
  1. In a large mixing bowl with an electric hand mixer or stand mixer fitted with the paddle attachment, beat softened butter, granulated sugar, and brown sugar on medium speed for 2 minutes until light and fluffy.
  2. Add the blotted pumpkin puree, egg yolk, and vanilla extract. Beat until smooth and emulsified.

Roll in Cinnamon Sugar & Bake
  1. In a small shallow bowl, stir together ⅓ cup granulated sugar, cinnamon, and pumpkin pie spice.
  2. Scoop dough into 1.5 tablespoon balls (using a medium cookie scoop). Roll each ball between your palms, then roll generously in the spiced cinnamon sugar until coated on all sides.
