Ingredients
  

Salmon & Vegetables
  • 4 fillets skin-on salmon fillets 6 oz each, pin bones removed and patted dry
  • 1 lb fresh green beans trimmed and patted dry
  • 1 tablespoon extra virgin olive oil for coating green beans
  • 1 large lemon thinly sliced into rounds, plus wedges for serving
Garlic Lemon Herb Butter Glaze
  • 4 tablespoon unsalted butter melted
  • 4 cloves fresh garlic finely minced or grated
  • 1 ½ tablespoon fresh lemon juice freshly squeezed
  • 2 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh parsley finely chopped
  • ½ teaspoon dried oregano or fresh thyme leaves
  • ¾ teaspoon coarse kosher salt divided
  • ½ teaspoon freshly cracked black pepper divided

Method
 

Prep Pan & Season Vegetables
  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil for effortless cleanup.
  2. Place the trimmed green beans on one side of the baking sheet. Drizzle with 1 tablespoon olive oil and season with ¼ teaspoon salt and a pinch of black pepper. Toss well and spread into an even, single layer.
Whisk Herb Butter & Top Salmon
  1. In a small bowl, whisk together melted butter, minced garlic, lemon juice, chopped dill, parsley, oregano, ½ teaspoon salt, and ¼ teaspoon black pepper until emulsified.
  2. Arrange the salmon fillets skin-side down on the other half of the baking sheet. Brush each fillet generously with the garlic lemon herb butter, reserving 1 tablespoon for finishing.
  3. Place a thin lemon round on top of each salmon fillet.
Roast to Tender Flakiness
  1. Bake at 400°F (200°C) for 12 to 14 minutes, or until the salmon flakes easily with a fork and registers 125°F to 130°F (52°C–54°C) internally for medium (or 145°F for fully well-done), while the green beans are blistered and crisp-tender.
  2. Drizzle remaining herb butter over the warm salmon and green beans. Garnish with fresh dill and serve immediately with extra lemon wedges.
