Ingredients

Seared Steak Bites
  • 1 ½ lbs halal top sirloin or ribeye steak trimmed of excess gristle and cut into 1-inch cubes
  • 2 tablespoon olive oil or avocado oil high smoke point for searing
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon freshly cracked black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
Caramelized Cremini Mushrooms
  • 10 oz fresh cremini (baby bella) mushrooms cleaned and sliced in half or thick quarters
  • 1 tablespoon olive oil
  • 1 tablespoon low-sodium soy sauce or tamari for rich umami glazing
  • ¼ teaspoon salt & pepper to taste
Foaming Garlic Herb Butter
  • 4 tablespoon unsalted butter divided
  • 5 cloves garlic minced fresh
  • 1 tablespoon fresh rosemary finely chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoon fresh Italian parsley chopped for garnish

Method

Season & Sear Steak Bites
  1. Pat steak cubes thoroughly dry with paper towels. Season evenly with kosher salt, cracked black pepper, garlic powder, and smoked paprika.
  2. Heat 2 tablespoons of oil in a large 12-inch heavy cast-iron skillet over high heat until smoking hot.
  3. Add steak cubes in a single layer without crowding (sear in two batches if necessary). Sear undisturbed for 2 minutes to form a deep brown caramelized crust, then flip with tongs and cook for another 1 to 2 minutes for juicy medium-rare. Transfer steak bites to a warm plate.
Caramelize the Mushrooms
  1. Lower heat to medium-high. Add 1 tablespoon olive oil and 1 tablespoon butter to the remaining skillet juices.
  2. Toss in the prepared cremini mushrooms. Sauté undisturbed for 3 minutes until deep golden-brown, then stir and cook for another 2 to 3 minutes.
  3. Drizzle in the low-sodium soy sauce to deglaze all the savory browned steak drippings from the bottom of the pan, coating the mushrooms in glossy mahogany sauce.
Combine with Garlic Herb Butter
  1. Reduce heat to medium-low. Add the remaining 3 tablespoons of butter, minced garlic, chopped rosemary, and thyme to the mushrooms in the skillet.
  2. Swirl and cook for 60 seconds until butter foams and garlic is deeply fragrant without browning.
  3. Return the seared steak bites and their accumulated resting juices to the skillet. Toss everything together vigorously for 1 minute until glistening and coated in garlic herb butter.
Garnish & Serve
  1. Remove from heat immediately. Sprinkle with chopped fresh parsley and extra cracked black pepper. Serve piping hot straight from the skillet alongside garlic mashed potatoes, buttered rice, or crisp green beans!

Notes

Auntie's Golden Skillet Rule: Two non-negotiable secrets make these steak bites steakhouse-quality: First, pat the beef completely dry before seasoning—moisture is the enemy of a golden sear. Second, never crowd the cast-iron skillet! Searing in batches ensures maximum Maillard browning in under 4 minutes while keeping the center melt-in-your-mouth juicy.
