Ingredients

Tender Chicken Cutlets & Herb Seasoning
  • 1 ½ lbs boneless skinless chicken breasts sliced horizontally into 4 thin cutlets, pounded to ⅓-inch even thickness
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian herb blend dried oregano, thyme, basil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
Crispy Garlic Parmesan Breading Station
  • 1 cup Japanese panko breadcrumbs for maximum crunch
  • ¾ cup freshly grated Parmigiano-Reggiano finely grated
  • 4 cloves fresh garlic minced ultra-fine
  • 3 tablespoon fresh flat-leaf parsley finely chopped
  • 2 large eggs whisked with 1 tablespoon water for smooth dipping
  • ½ cup all-purpose flour for light dusting
Pan-Searing & Garlic Basting Butter
  • 3 tablespoon extra virgin olive oil for high-heat searing
  • 3 tablespoon unsalted butter divided
  • 3 cloves fresh garlic smashed, for pan basting
  • 1 medium lemon cut into wedges for serving

Method

Prep & Dredge Cutlets
  1. Season the Cutlets: Pat chicken cutlets thoroughly dry with paper towels (dry meat guarantees a crispy crust that doesn't peel). Season both sides evenly with garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
  2. Set Up 3 Shallow Bowls: In bowl 1, add flour. In bowl 2, whisk eggs with 1 tablespoon water. In bowl 3, thoroughly toss panko breadcrumbs, finely grated parmesan cheese, minced garlic, and fresh parsley.
  3. Dredge & Press: Coat each cutlet lightly in flour, shaking off excess. Dip completely into whisked egg, then transfer into the garlic parmesan panko mixture. Press down firmly so the cheesy crumbs adhere securely across both sides.
Pan-Sear & Baste
  1. Heat the Skillet: Place a large heavy skillet (cast iron preferred) over medium heat. Add olive oil and 1 tablespoon butter. Heat until shimmering and butter foam begins to subside.
  2. Golden Sear: Carefully lay chicken cutlets into the pan in a single layer without crowding (cook in batches if needed). Sear undisturbed for 3 to 4 minutes until deeply golden brown and crisp underneath.
  3. Flip & Garlic Butter Baste: Flip cutlets. Add remaining 2 tablespoons butter and smashed garlic cloves to the pan. Tilt the skillet slightly and spoon the hot bubbling garlic butter repeatedly over the cutlets for 3 minutes until golden on both sides and chicken reaches an internal temperature of 165°F (74°C).
Rest & Garnish
  1. Rest on Wire Rack: Transfer crispy cutlets to a wire rack or warm platter to rest for 3 minutes. This allows juices to redistribute without trapping steam beneath the crispy crust.
  2. Garnish & Serve: Sprinkle with chopped fresh parsley, extra parmesan shavings, and serve immediately with fresh lemon wedges for squeezing!

Notes

Chef's Crunch Tip: Always use freshly grated Parmigiano-Reggiano rather than pre-grated bottled cheese, which contains anti-caking agents that hinder melting and crisping. For maximum crunch retention, rest hot cooked cutlets on a wire cooling rack rather than a flat plate!
