Saute Aromatics & Build Broth
- Heat olive oil in a wide Dutch oven or heavy-bottomed soup pot over medium heat. Add diced onion and cook for 3 to 4 minutes until softened and translucent.
- Stir in minced garlic, julienned sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 60 to 90 seconds until fragrant, releasing rich aromatic herb oils.
- Pour in the chicken bone broth, scraping up any caramelized bits from the bottom of the pot. Bring the liquid to a gentle, steady rolling boil over medium-high heat.
Cook Tortellini & Envelop in Cream
- Drop in the refrigerated three-cheese tortellini. Reduce heat to medium and simmer uncovered for 3 to 4 minutes (or 1 minute shy of package instructions) until tortellini float to the top and are just tender to the bite.
- Reduce heat to low. Pour in the heavy cream and stir in the freshly grated Parmigiano-Reggiano cheese, stirring continuously until the cheese melts into a smooth, velvety broth.
- Add the fresh baby spinach, stirring gently for 1 minute until the leaves wilt into vibrant tender ribbons. Taste and season with salt and freshly cracked black pepper.
Garnish & Serve
- Ladle hot soup into warm ceramic bowls, ensuring a generous mound of pillowy tortellini, sun-dried tomatoes, and spinach in every serving.
- Crown with shaved parmesan curls, freshly torn basil leaves, and an extra pinch of black pepper. Serve immediately with warm crusty garlic sourdough bread.
