Ingredients

Aromatics & Mirepoix
  • 2 tablespoon unsalted butter or olive oil
  • 1 medium yellow onion finely diced
  • 2 ribs celery diced
  • 1 medium red bell pepper seeded and finely diced
  • 4 cloves fresh garlic minced
  • 1 ½ teaspoon smoked paprika adds rich smoky bacon-like aroma
  • ½ teaspoon ground cumin
  • ½ teaspoon dried thyme
  • 1 teaspoon fine sea salt & black pepper to taste
Chowder Body & Vegetables
  • 2 large sweet potatoes approx. 1.5 lbs, peeled and cut into uniform ½-inch cubes (about 4 cups)
  • 3 cups sweet corn kernels fresh off the cob, or frozen thawed
  • 4 cups vegetable broth or low-sodium chicken bone broth
  • 2 tablespoon all-purpose flour or cornstarch, to thicken chowder base
  • 1 cup heavy whipping cream or canned full-fat coconut milk for dairy-free
  • 1 tablespoon pure maple syrup balances the smoky spices with sweet potato notes
Garnishes for Serving
  • ¼ cup crispy fried shallots adds delectable texture and savory crunch
  • 2 tablespoon fresh chives finely sliced
  • 1 pinch red pepper flakes optional, for gentle kick

Method

Sauté Aromatics & Build Flavor
  1. In a large heavy Dutch oven or soup pot, melt 2 tablespoons butter over medium heat.
  2. Add the diced onion, celery, and red bell pepper. Sauté for 5 to 6 minutes until soft and fragrant.
  3. Stir in minced garlic, smoked paprika, ground cumin, dried thyme, salt, and black pepper. Cook for 60 seconds until delightfully aromatic.
  4. Sprinkle the flour over the softened vegetables and stir vigorously for 1 minute to cook off raw flour taste.
Simmer Vegetables & Thicken
  1. Slowly pour in the broth while whisking or stirring continuously to dissolve the flour into a smooth liquid.
  2. Add the cubed sweet potatoes and sweet corn kernels. Bring soup to a boil over medium-high heat.
  3. Reduce heat to medium-low, cover partially with lid, and simmer gently for 15 to 18 minutes until sweet potatoes are fork-tender.
  4. Pro Texture Secret: Ladle 2 cups of the simmered soup (broth, sweet potatoes, and corn) into a blender, puree until silky smooth, and pour back into the pot! This creates a luxuriously thick, velvety chowder base naturally without needing tons of flour.
Add Cream & Garnish
  1. Lower heat to low. Stir in 1 cup heavy whipping cream and 1 tablespoon maple syrup. Simmer gently for 2 minutes to heat through without boiling.
  2. Taste and adjust salt and cracked black pepper if needed. Ladle steaming chowder into bowls. Top with crispy fried shallots, sliced chives, and a dust of smoked paprika. Serve immediately with warm cornbread or crusty sourdough!

Notes

Dairy-Free Adaptable: Simply substitute full-fat canned coconut milk for the heavy cream, and olive oil for the butter. The subtle sweetness of coconut milk harmonizes extraordinarily well with sweet potatoes and roasted corn!
