  • 1 medium yellow onion finely diced
  • 4 cloves fresh garlic minced
  • ⅓ cup oil-packed sun-dried tomatoes drained and julienned
  • 2 tablespoon tomato paste for rich savory umami foundation
  • 1 teaspoon dried Italian seasoning blend of basil, oregano, rosemary, and thyme
  • ¼ teaspoon crushed red pepper flakes for a subtle warmth (optional)
  • ½ teaspoon fine sea salt or to taste
  • ¼ teaspoon freshly ground black pepper
Broth, Tortellini & Greens
  • 5 cups low-sodium chicken broth or rich vegetable stock
  • 1 lb (16 oz) refrigerated fresh three-cheese tortellini fresh pasta cooks in just 3 minutes!
  • ¾ cup heavy whipping cream or half-and-half for a lighter broth
  • ¾ cup Parmigiano-Reggiano cheese freshly grated for silky melting
  • 4 cups fresh baby spinach leaves roughly chopped (or baby kale)
Finishing & Garnishes
  • 2 tablespoon fresh basil leaves torn or thinly julienned for vibrant aroma
  • 2 tablespoon shaved parmesan cheese for topping each bowl

Method

Brown Sausage & Sauté Aromatics
  1. Heat a large 5-to-6 quart Dutch oven or heavy stockpot over medium-high heat. Add the ground halal Italian sausage, breaking it apart with a wooden spoon into bite-sized morsels. Cook for 5 to 6 minutes until nicely browned and caramelized.
  2. Add the finely diced onion, minced garlic, julienned sun-dried tomatoes, tomato paste, Italian seasoning, and red pepper flakes. Sauté for 2 to 3 minutes, stirring constantly until the onions soften and the tomato paste deepens into a fragrant mahogany red.
Simmer Tortellini & Finish with Cream
  1. Pour in the chicken broth, using your spoon to scrape up all the delicious browned bits (fond) from the bottom of the pot. Bring the broth to a rolling boil over high heat.
  2. Add the refrigerated cheese tortellini. Reduce heat to medium and cook uncovered at a gentle simmer for 3 to 4 minutes just until the tortellini float to the surface and are tender yet al dente. Do not overcook!
  3. Turn heat to low. Stir in the heavy cream and grated Parmigiano-Reggiano until completely melted and velvety smooth. Add the fresh baby spinach, gently folding it into the hot soup for 60 seconds until just wilted into bright green ribbons.
  4. Remove pot from the heat immediately. Taste and adjust seasoning with sea salt and freshly cracked black pepper. Ladle into warm bowls, top with freshly shaved parmesan and basil ribbons, and serve with warm garlic sourdough bread!

Notes

Chef's Pasta Tip: Always use refrigerated fresh cheese tortellini rather than dried shelf-stable tortellini! Fresh tortellini cooks in just 3 to 4 minutes and preserves a delicate, pillowy bite. If planning on leftovers, cook the tortellini separately and ladle the hot soup over each portion to prevent the pasta from soaking up broth overnight.
