Ingredients
  

Dry Oat & Apple Base
  • 2 ½ cups old-fashioned rolled oats certified gluten-free if needed, do not use instant oats
  • 2 medium Honeycrisp or Fuji apples cored and diced into ½-inch cubes (peel on or off)
  • ¾ cup pecans coarsely chopped and divided (half for batter, half for topping)
  • 1 ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg freshly grated
  • 1 teaspoon baking powder
  • ½ teaspoon fine sea salt
Spiced Custard Mixture
  • 2 cups milk whole milk, almond milk, or oat milk
  • 2 large eggs room temperature
  • ⅓ cup pure maple syrup grade A amber, plus extra for serving
  • 3 tablespoon unsalted butter melted and cooled (or melted coconut oil)
  • 2 teaspoon pure vanilla extract

Method
 

Prep Pan & Combine Dry Ingredients
  1. Preheat oven to 375°F (190°C). Lightly grease an 8x8-inch or 9x9-inch ceramic baking dish with butter or cooking spray.
  2. In a large mixing bowl, stir together the rolled oats, ground cinnamon, nutmeg, baking powder, sea salt, diced Honeycrisp apples, and half of the chopped pecans until evenly dispersed.
Whisk Custard & Assemble
  1. In a separate medium bowl or large measuring cup, whisk together the milk, eggs, pure maple syrup, melted butter, and vanilla extract until completely blended.
  2. Spread the oat and apple mixture evenly into the prepared baking dish. Pour the liquid custard evenly over the oats, gently pressing the surface with a spatula so all oats are submerged in the liquid.
  3. Scatter the remaining chopped pecans across the top, along with an optional sprinkle of coarse turbinado sugar or cinnamon.
Bake to Golden Perfection
  1. Bake at 375°F (190°C) for 32 to 36 minutes, until the top is golden-brown, the pecans are delightfully toasted, and the center is set and no longer liquid.
  2. Remove from oven and let rest for 8 to 10 minutes to firm up slightly. Slice into generous squares and serve warm with a drizzle of pure maple syrup and a splash of cold cream or milk.
