Ingredients

Spiced Pumpkin Cookie Dough
  • ½ cup pure canned pumpkin purée blotted thoroughly with paper towels to remove excess moisture
  • ½ cup unsalted butter melted and cooled slightly
  • ½ cup light brown sugar packed, for chewiness
  • ½ cup granulated white sugar
  • 1 large egg yolk room temperature (yolk only for dense chew!)
  • 1 ½ teaspoon pure vanilla extract
  • 1 ⅔ cups all-purpose flour spooned and leveled
  • 1 teaspoon cream of tartar essential for classic snickerdoodle tang and chew
  • ½ teaspoon baking soda
  • 1 ½ teaspoon pumpkin pie spice blend of cinnamon, ginger, nutmeg, allspice, and cloves
  • ½ teaspoon kosher salt
Sparkling Cinnamon Sugar Coating
  • ⅓ cup granulated white sugar or turbinado sugar for extra sparkle
  • 1 ½ tablespoon ground cinnamon fragrant Ceylon or Saigon cinnamon

Method

Blot Pumpkin & Whisk Wet Ingredients
  1. Spread the pumpkin purée across a plate lined with 4 layers of paper towels. Press another 2 paper towels firmly on top to absorb excess moisture until the purée feels thick and paste-like. Measure out ⅓ cup of blotted pumpkin.
  2. In a large mixing bowl, whisk together melted butter, brown sugar, granulated sugar, blotted pumpkin purée, egg yolk, and vanilla extract until completely smooth, glossy, and emulsified.
Fold Dry Ingredients & Chill
  1. In a separate bowl, whisk together flour, cream of tartar, baking soda, pumpkin pie spice, and salt.
  2. Pour dry ingredients into the wet mixture and fold gently with a rubber spatula just until no flour streaks remain. Cover bowl and chill dough in the refrigerator for 30 minutes to firm up slightly for easy rolling.
Roll in Cinnamon Sugar & Bake
  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. In a small shallow bowl, stir together ⅓ cup granulated sugar and 1 ½ tablespoons ground cinnamon.
  2. Scoop dough using a 1 ½-tablespoon cookie scoop and roll into smooth balls. Roll each ball generously in the cinnamon sugar mixture until heavily coated on all sides.
  3. Arrange dough balls 2 inches apart on the baking sheets. Bake at 350°F for 9 to 11 minutes until edges are set and tops are crinkled and puffed. Do not overbake; the centers should still look very soft!
The Pan-Bang Trick & Cool
  1. Immediately after pulling the baking sheet from the oven, gently tap or bang the pan on the counter 2 to 3 times to collapse the cookies slightly and create signature crinkly ripples. Let cookies cool on the sheet for 10 minutes before transferring to a wire rack to set.

Notes

Baker's Secret for Chewy (Not Cakey!) Pumpkin Cookies: Pumpkin purée is full of water, which normally turns cookies into spongy little cakes. By blotting the pumpkin purée firmly with paper towels before mixing and using only the rich egg yolk instead of the watery white, you eliminate excess water while keeping all the autumn pumpkin flavor—guaranteeing ultra-chewy, melt-in-your-mouth snickerdoodles every single time!
