Ingredients

Spiced Caramelized Honeycrisp Apples
  • 2 medium Honeycrisp or Granny Smith apples peeled, cored, and finely diced into ¼-inch pieces (approx. 2 cups)
  • 1 tablespoon unsalted butter for sautéing
  • 2 tablespoon light brown sugar packed
  • 1 teaspoon ground cinnamon high-quality Ceylon cinnamon
  • ⅛ teaspoon ground nutmeg freshly grated
Nutty Brown Butter Blondie Batter
  • 1 cup unsalted butter 2 sticks, browned and cooled for 10 minutes
  • 1 ¼ cups light brown sugar packed, creates maximum chewiness
  • ¼ cup granulated white sugar gives the crackly crinkly top crust
  • 2 large eggs room temperature
  • 1 large egg yolk adds rich fudgy moisture
  • 2 teaspoon pure vanilla extract
  • 2 cups all-purpose flour spooned and leveled
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground cinnamon stirred into the dry mix
Caramel Drizzle & Finishing (Optional)
  • 3 tablespoon salted caramel sauce for drizzling across cooled bars
  • 1 pinch flaky Maldon sea salt for finishing top

Method

Brown the Butter & Pre-Cook Apples
  1. In a medium light-colored skillet, melt 1 cup unsalted butter over medium heat. Swirl occasionally as it foams and sizzles. After 5 to 7 minutes, nutty golden-brown specks will form on the bottom. Immediately pour into a heatproof bowl to cool for 10 minutes.
  2. In a small skillet, melt 1 tablespoon butter over medium heat. Add diced apples, 2 tablespoons brown sugar, 1 teaspoon cinnamon, and nutmeg. Sauté for 4 to 5 minutes until apples are just tender and excess juices evaporate. Remove from heat and cool completely (this ensures blondies don't become soggy!).
Mix Batter & Bake
  1. Preheat oven to 350°F (175°C). Line an 8x8-inch or 9x9-inch square metal baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, vigorously whisk cooled brown butter with brown sugar and granulated sugar for 2 full minutes until glossy and combined.
  3. Whisk in eggs, egg yolk, and vanilla extract vigorously for 1 minute until batter turns thick and pale—this step forms the crinkly, paper-thin shiny crust!
  4. Gently fold in flour, baking powder, sea salt, and ½ teaspoon cinnamon with a rubber spatula just until combined. Gently fold in the cooled caramelized apples.
  5. Spread the thick batter evenly into the prepared pan. Bake for 28 to 32 minutes until edges are golden and set, the top is crinkly, and a toothpick inserted into the center comes out with moist crumbs (not wet batter).
  6. Allow blondies to cool completely in the pan for at least 1 hour for clean, chewy slices. Lift using parchment handles, drizzle with warm salted caramel, slice into 16 squares, and enjoy!

Notes

Baker's Chewy Secret: Pre-cooking the diced apples for 4 minutes in butter and brown sugar cooks off extra water. If you fold raw apples directly into blondie batter, their moisture releases during baking and makes the bars cakey or wet instead of dense and chewy!
