Method
Toast Streusel & Sauté Apples
- Bake Golden Oat Streusel: Preheat oven to 350°F (175°C). In a small bowl, stir rolled oats, flour, brown sugar, melted butter, and cinnamon into moist clumpy crumbs. Spread onto a parchment-lined baking sheet and bake for 8 to 10 minutes until golden brown and toasted fragrant. Set aside to cool.
- Sauté Spiced Apples: In a skillet over medium heat, melt 2 tablespoons butter. Add finely diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5 to 6 minutes, stirring frequently, until apples are tender-crisp and swimming in glossy cinnamon syrup. Remove from heat.
Whip Cheesecake & Layer Dip
- Whip Cream Cheese Base: In a medium mixing bowl, beat softened cream cheese, powdered sugar, brown sugar, vanilla, and cinnamon with an electric hand mixer for 2 minutes until creamy and lump-free. Gently fold in the whipped cream with a spatula until light and cloud-like.
- Spread in Serving Dish: Smooth the whipped cheesecake layer evenly across the bottom of a shallow 8-inch ceramic pie plate or baker dish.
Crown, Garnish & Serve
- Layer Toppings: Spoon the warm cinnamon apples over the center of the cheesecake base. Drizzle generously with warm salted caramel sauce, and shower the top with crunchy golden oat streusel crumbs.
- Serve with Dippers: Surround the dish with fresh red and green apple slices, honey graham crackers, and vanilla wafers. Serve warm or chilled!
Notes
Chef's Make-Ahead Tip: You can prepare the whipped cheesecake layer and bake the oat streusel up to 24 hours in advance (store streusel in an airtight jar at room temperature to preserve crunch). When ready to serve, sauté the apples fresh for 5 minutes so they sit warm against the cool cheesecake!
