Ingredients

Luscious Cream Cheese Swirl
  • 8 oz cream cheese brick-style, softened to room temperature
  • ¼ cup granulated sugar
  • 1 large egg yolk helps set the cheesecake swirl during baking
  • 1 teaspoon pure vanilla extract
Crunchy Cinnamon Streusel
  • ⅓ cup light brown sugar packed
  • ¼ cup all-purpose flour
  • ¼ cup rolled old-fashioned oats for extra texture
  • 1 teaspoon ground cinnamon
  • 2 ½ tablespoon unsalted butter melted or cold cubed
Spiced Pumpkin Muffin Batter
  • 1 ¾ cups all-purpose flour spooned and leveled
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 1 ½ tablespoon pumpkin pie spice cinnamon, nutmeg, ginger, cloves
  • 1 can (15 oz) pure pumpkin puree not pumpkin pie mix
  • ½ cup granulated white sugar
  • ½ cup dark brown sugar packed
  • ½ cup vegetable oil or melted coconut oil yields ultra-moist bakery crumb
  • 2 large eggs room temperature
  • ¼ cup whole milk or buttermilk
  • 1 teaspoon pure vanilla extract

Method

Prep Oven & Cream Cheese Swirl
  1. Preheat oven to 425°F (218°C). Line a 12-count muffin tin with paper or tulip muffin liners. Greasing every other cavity lightly guarantees high-domed rise!
  2. In a medium bowl, beat softened cream cheese, granulated sugar, egg yolk, and vanilla extract with a handheld mixer on medium speed for 2 minutes until completely smooth, silky, and lump-free. Set aside.
Mix Cinnamon Streusel
  1. In a small bowl, whisk together brown sugar, flour, rolled oats, and cinnamon. Stir in the melted butter with a fork until moist, clumpy crumbs form. Chill in the fridge while preparing the batter.
Whisk Pumpkin Batter
  1. In a large bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  2. In a separate medium bowl, whisk together pumpkin puree, granulated sugar, dark brown sugar, oil, whole eggs, milk, and vanilla extract until glossy and fully combined.
  3. Pour wet ingredients into dry ingredients. Gently fold with a rubber spatula just until combined and no flour streaks remain. Do not overmix to keep the crumb light and tender.
Layer, Swirl & Streusel
  1. Divide half the pumpkin batter evenly among the 12 muffin cups. Spoon 1 tablespoon of cream cheese filling into the center of each.
  2. Top with the remaining pumpkin batter, filling cups nearly to the rim. Dollop the remaining cream cheese on top. Use a wooden toothpick or butter knife to swirl the top layer into an elegant marbled pattern.
  3. Generously scatter the chilled cinnamon oat streusel over each muffin top, pressing gently so it adheres.
Bake to Domed Perfection
  1. Bake at 425°F (218°C) for the first 5 minutes. The initial high heat rapidly activates leaveners to produce sky-high bakery domes.
  2. Keeping the oven door shut, reduce heat to 350°F (177°C) and bake for an additional 15 to 17 minutes until a toothpick inserted into the pumpkin part comes out clean.
  3. Cool in the pan for 10 minutes, then transfer muffins to a wire rack. Serve warm or room temperature!

Notes

Auntie's High-Dome Bakery Secret: The secret behind towering bakery-style muffins is the temperature burst technique! Baking at 425°F for the first 5 minutes forces steam to rise instantly, pushing the batter upward into a dramatic domed top before lowering the heat to 350°F so the center bakes moist and velvety without burning the streusel.
