Baked Apple Cider French Toast Casserole

Fluffy, custardy brioche cubes baked with sweet cinnamon-spiced caramelized apples, soaked in a rich vanilla-spiced apple cider custard, and finished with a crunchy brown sugar pecan streusel. Perfect for easy holiday mornings and weekend family brunches!

Ingredients
  

Bread & Caramelized Apple Layer
  • 1 loaf (approx 14-16 oz) artisan brioche or challah bread day-old, cut into 1-inch cubes
  • 3 medium Honeycrisp or Gala apples peeled, cored, and diced into ½-inch pieces
  • 2 tablespoon unsalted butter for sautéing apples
  • 2 tablespoon dark brown sugar packed
  • 1 teaspoon ground cinnamon
  • ¼ cup pure fresh apple cider orchard-pressed non-alcoholic cider
Spiced Apple Cider Custard
  • 8 large eggs room temperature
  • 1 cup whole milk
  • ½ cup heavy whipping cream for a silky custardy texture
  • ½ cup pure fresh apple cider
  • ¼ cup pure maple syrup grade A amber
  • 2 teaspoon pure vanilla extract
  • 1 ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg freshly grated preferred
  • ¼ teaspoon fine sea salt
Brown Sugar Pecan Streusel & Glaze
  • ½ cup all-purpose flour
  • ½ cup dark brown sugar packed
  • 1 teaspoon ground cinnamon
  • 4 tablespoon cold unsalted butter cut into small cubes
  • ½ cup chopped pecans roughly toasted
  • pure maple syrup & powdered sugar for serving

Method
 

Prep & Sauté Apples
  1. Caramelize Apples: In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the diced apples, brown sugar, cinnamon, and ¼ cup apple cider. Simmer for 5 to 6 minutes until the apples are lightly tender and glazed with reduced cider. Remove from heat and let cool slightly.
  2. Arrange Bread: Grease a 9x13-inch ceramic baking dish with butter. Spread half of the cubed brioche bread across the bottom. Scatter the warm caramelized apples and their pan juices evenly over the bread, then top with the remaining brioche cubes.
Mix Custard & Soak
  1. Whisk Spiced Custard: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, ½ cup apple cider, pure maple syrup, vanilla extract, cinnamon, nutmeg, and sea salt until completely smooth and emulsified.
  2. Pour & Absorb: Pour the custard evenly over the brioche cubes in the baking dish, pressing down gently with a spatula so all bread pieces soak up the liquid. (Make-ahead tip: Cover tightly with foil and refrigerate overnight, or let soak for at least 20 minutes before baking.)
Streusel & Baking
  1. Make Streusel: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry cutter or your fingertips until pea-sized crumbles form. Stir in the chopped pecans. Sprinkle the streusel generously over the top of the soaked casserole.
  2. Bake to Golden Perfection: Preheat oven to 350°F (175°C). Bake covered with aluminum foil for 25 minutes. Remove the foil and continue baking uncovered for 20 to 25 minutes, until the top is deeply golden brown, the edges are puffed and crispy, and a knife inserted in the center comes out clean.
  3. Rest, Dust & Serve: Let rest for 10 minutes before slicing. Dust with confectioners sugar, drizzle generously with warm maple syrup or boiled cider syrup, and serve warm with hot coffee.

Notes

Make-Ahead Overnight Instructions: Assemble the casserole through step 4 the night before, cover tightly with foil, and store in the refrigerator for up to 16 hours. Prepare the streusel topping separately and store in a small container in the fridge. In the morning, top with streusel and bake straight from the fridge, adding 5 to 10 extra minutes of bake time.
