Instructions
- Prepare the Watermelon: Slice off both ends of the watermelon to create a flat base. Cut the watermelon into thick rounds, about 1.5 to 2 inches thick.
- Whip the Cream: In a mixing bowl, combine 2 cups of heavy whipping cream, 1-2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Whip until stiff peaks form.
- Assemble the Cake: Place one watermelon slice on a serving platter. Spread a layer of whipped cream over the top. Add another watermelon slice and repeat the process until all slices are stacked.
- Decorate: Use the remaining whipped cream to cover the sides and top of the cake. Garnish with fresh fruits and mint leaves.
- Chill and Serve: Refrigerate for about 30 minutes before slicing and serving.
