Description

This refreshing Vegetarian Pasta Salad is a colorful, crunchy dish that's perfect for a light lunch or a side at your next gathering. With a blend of fresh veggies, tender pasta, and a zesty dressing, it's both satisfying and healthy!


Ingredients

  • 2 cups cooked pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare the Pasta: Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
  2. Mix the Vegetables: In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and olives.
  3. Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, balsamic vinegar, oregano, salt, and pepper.
  4. Combine: Add the cooled pasta and dressing to the vegetable mixture. Toss until evenly coated.
  5. Serve: Garnish with feta cheese if desired. Chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • You can swap out the feta cheese for vegan cheese or omit it for a dairy-free version.
  • Feel free to add or remove veggies based on what's in season or what you prefer.
