Ingredients
Scale
For the Dough:
- 2 cups all-purpose flour
- 2 tablespoons coconut sugar (or brown sugar)
- 1 packet (2 ¼ teaspoons) instant yeast
- ½ teaspoon salt
- ½ cup almond milk (or other plant-based milk)
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
For the Filling:
- ¼ cup brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon ground cardamom
- ½ teaspoon ground cloves
- 2 tablespoons coconut oil, softened
For the Icing:
- 1 cup powdered sugar
- 2 tablespoons almond milk
- ½ teaspoon vanilla extract
Instructions
- Make the Dough:
- In a large mixing bowl, combine the flour, coconut sugar, instant yeast, and salt. In a small saucepan, gently heat the almond milk and melted coconut oil until warm (not hot). Add the warm mixture and vanilla extract to the dry ingredients. Mix until a dough forms.
- Knead and Rise:
- Knead the dough on a lightly floured surface for about 5 minutes until smooth. Place it in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for about 1 hour, or until doubled in size.
- Prepare the Filling:
- In a small bowl, mix the brown sugar, cinnamon, ginger, cardamom, and cloves. Roll out the dough into a rectangle (about ¼ inch thick), spread the softened coconut oil over the surface, and sprinkle the spice mixture evenly.
- Roll and Slice:
- Roll the dough tightly into a log, then slice it into 12 equal rolls. Place the rolls in a greased baking dish, cover, and let them rise for another 30 minutes.
- Bake:
- Preheat your oven to 350°F (175°C). Bake the rolls for 20-25 minutes, or until golden brown.
- Make the Icing:
- While the rolls cool, whisk together the powdered sugar, almond milk, and vanilla extract until smooth. Drizzle over the warm rolls before serving.
Notes
- For extra chai flavor, brew a strong cup of chai tea and use it in the dough instead of almond milk.
- These cinnamon rolls are best enjoyed fresh but can be stored in an airtight container for up to three days.
- You can freeze unbaked rolls. Just thaw and allow them to rise before baking.
