For the Donuts

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar (packed)
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk (or any plant-based milk)
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons almond milk (or any plant-based milk)
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat Oven: Preheat the oven to 350°F (175°C). Grease a donut pan or use a silicone donut mold.
  • Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Combine Wet Ingredients: In another bowl, mix brown sugar, applesauce, almond milk, and vanilla extract until well combined.
  • Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in grated carrots, walnuts, and raisins if using.
  • Fill Donut Pan: Spoon the batter into the prepared donut pan, filling each mold about 3/4 full.
  • Bake: Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  • Make Glaze: In a small bowl, whisk together powdered sugar, almond milk, and vanilla extract until smooth.
  • Glaze Donuts: Dip the cooled donuts into the glaze or drizzle it over the top.

Notes

  • For a healthier option, you can substitute some of the sugar with mashed bananas or another sweetener.
  • Store leftover donuts in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
