- 2 ½ cups whole milk
- ½ cup granulated sugar
- 1/4 teaspoon salt
- 3 large egg yolks
- 2 tablespoons cornstarch
- 2 tablespoons unsalted butter
- 1 ½ teaspoons vanilla extract
Instructions
- In a saucepan, whisk together milk, sugar, and salt. Heat over medium heat until steaming, but not boiling.
- In a bowl, whisk egg yolks and cornstarch until smooth. Gradually add hot milk to egg mixture, whisking continuously.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
- Remove from heat and stir in butter and vanilla extract.
- Transfer pudding into individual bowls or one large dish. Cover with plastic wrap directly on the surface to prevent a skin from forming. Chill for at least 2 hours before serving.
Notes
- For extra richness, you can substitute part of the milk with heavy cream.
- For an intense vanilla flavor, use vanilla beans instead of extract.
