Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 medium carrots, sliced
  • 3 celery stalks, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 8 oz wide egg noodles
  • 4 cups low-sodium chicken broth
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables and mincing the garlic.
  2. In a large pot over medium heat, heat olive oil. Add onion and garlic; sauté until fragrant (about 2 minutes). Add carrots and celery, stirring occasionally until softened.
  3. Add chicken breasts and chicken broth to the pot; bring to a boil then reduce to a simmer for about 20 minutes until chicken is cooked through.
  4. Remove chicken from the pot; shred with two forks and return to the pot along with any accumulated juices.
  5. Stir in egg noodles; cook according to package instructions (about 8 minutes) until al dente.
  6. Finish with thyme and parsley; season with salt and pepper to taste. Serve hot.
