- 1-inch piece fresh ginger, grated
- 1 tsp ground turmeric
- 4 cups vegetable broth
- 2 medium carrots, sliced
- 1 medium potato, cubed
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- Sauté Aromatics: Heat olive oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
