Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs (regular or gluten-free)
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup ketchup
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar

Instructions

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment paper.
  • In a skillet, sauté the onion and garlic in olive oil over medium heat for 3-4 minutes until softened. Set aside to cool.
  • In a large bowl, combine the ground turkey, breadcrumbs, milk, egg, oregano, basil, thyme, salt, and pepper. Add the sautéed onion and garlic, then mix until just combined (don’t overmix).
  • Shape the meat mixture into a loaf and place it on the prepared pan.
  • In a small bowl, mix together ketchup, honey, and apple cider vinegar. Spread the glaze evenly over the top of the meatloaf.
  • Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10 minutes before slicing.

Notes

  • For added moisture, you can use ground chicken or even mix in finely grated carrots or zucchini.
  • To make this recipe gluten-free, simply substitute breadcrumbs with oats or gluten-free breadcrumbs.
  • You can freeze leftovers by wrapping them tightly in foil or plastic wrap, then storing in a freezer-safe bag for up to 3 months.
  • Serve with mashed potatoes, roasted vegetables, or a simple salad for a complete meal.
