Perfect for gatherings or cozy dinners at home, they are easily customizable with your favorite toppings.

Ingredients

Scale
  • 3 lbs chuck roast
  • 4 dried guajillo chiles, seeds removed
  • 1 large onion, diced
  • 5 garlic cloves
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 4 cups low-sodium beef broth
  • Juice of 2 limes
  • Corn tortillas (for serving)

Instructions

  1. Prepare the Chiles: Remove stems and seeds from the guajillo chiles. Toast in a dry skillet over medium heat for about 2 minutes until fragrant.
  2. Blend the Sauce: In a blender, combine toasted chiles, garlic, onion, cumin, oregano, and beef broth. Blend until smooth.
  3. Brown the Meat: Heat oil in a pot over medium-high heat and brown the chuck roast on all sides (about 8 minutes).
  4. Combine Ingredients: Pour the sauce over the browned meat. Cover and simmer on low heat for about 3 hours until fork-tender.
  5. Assemble Tacos: Shred the meat with two forks. Warm corn tortillas briefly on a skillet and fill with shredded meat.
  6. Serve: Garnish with chopped onions, cilantro, lime wedges, and drizzle with sauce before serving.
